Grapes harvest at the best plots of Cabernet Sauvignon, and sorted twice only by hand.
Cold skin contact pre-fermentation followed by a moderate warm fermentation at 26/28°C in small sized steel vats. Pressed after 18/20 days of maceration at 22-24°C.
Aged for 14 months in small French oak casks (225 L, 15 % new).
Effusive aroma of dark cherry layered with hints of spicy and earthy notes of liquorice are the centre of this powerful red. The structured palate doles out layers of flavours, from fresh red fruit to a soft touch of toasting. Tannins are silky, making this wine approachable now, but likely capable of aging well. A seductive wine to enjoy through the time.
