Thinning also called “green harvest” consists of removing a certain number of clusters before the ripening period in order to dedicate all the metabolites provided by the canopy to a restricted amount of berries.

Grape vines often produce 2 or 3 clusters per shoot. At the Chateau Nine Peaks, not more than one cluster per shoot is left.

Thinning is a meticulous job and differs for each vine and each grape. This provides an indication of the increasingly precise and accurate care, to which we tend our vineyard.
