C9P harvest report 2015

Tuesday, October 13, Chateau Nine Peak began picking Cabernet Sauvignon grapes. At chateau Nine Peaks, each plot is harvested at a specific time to ensure the grapes reach optimal ripeness and concentration. Analyses are made by our production director Jacky Yin and our French Agronomy Researcher Eric Moro, according to relevant parameters such as the style of wine, grape varieties, taste of the grape, and climate conditions. Decision of harvest is taken including Marc Dworkin, our French Chief Winemaker and Radostin, our Bulgarian winemaker.

The grapes are entirely handpicked in 18 kilograms open baskets, to ensure the quality of the harvest, preserve the integrity of the fruit and to avoid the grapes to be crushed under their own weight. Grapes are sorted by hand on a sorting table with great care before being de-stemmed.
